When Tennessee scored to go up 34-30 with 11 minutes to go in the game, why not go for 2 there?

If you make it, 2 FGs won’t beat you, but if you kick the XP or miss the 2 point conversion, it’s essentially the same - either a TD or 2 FGs will beat you.

As it played out, if Tennessee had gone for 2 and made it to go up 36-30, the FG after the fumble recovery would have put them up 9 points (2 scores], and probably put the game out of reach for Georgia. If they had missed the 2 point conversion, the FG after the fumble would have made it a 7 point game, and likely led to the same result when Georgia scored the last TD in regulation, as they would probably have kicked the XP.
