49ers coaching staff (cool story brah)

My sister is on the road to being an owner/operator for CFA out in California. On Monday, she was asked to deliver 350 chicken sandwiches to the 49ers facility for the team and staff.
She got to meet several of the players, and said they were all really nice...and all that jazz. Said that Andy Lee, the punter, ate five sandwiches in one sitting, and the rest of the team kept clowning him for being able to eat more than the rest of the team.
She said a coach recognized her accent and said that he was in Knoxville coaching for Tennessee last year. They apparently talked for a while, but she doesn't remember his name. I can't for the life of me figure out who that might be. Any ideas?
