i dont know if there is a central market in knoxville but if they do ask someone in the fish section... usually frozen and if you are gonna cook it, fry the heck out of it.

I bought some 3-4 years ago while I was in school there from the shrimp dock. It was all frozen and I think pre-cut. we deep fried it and it was ok. Same year is poured the entire game.
