After that I chase it with an olive oil & Metamucil sammich.

Imma retract my earlier post concerning the Buttery Olive Oil from Sciabica. Used it last night to sear some tuna and again this morning with my avocado and egg. It's really good. Silky Smooth and fruity.

Kidding. Not really, I'm sure you know what you're gonna do. I only cooked it when I had to. I cooked it in high heat one time just to see if I could get it crispy but still MR and it was good enough I ate it, but I wouldn't do that for Easter dinner.

I prefer a mint sauce over jelly, but that's just me. I will make it and I won't the jelly, so that's the biggest reason.

It's the wife's idea, so... Definitely going to have a backup protein just in case. Going with the J Kenji Lopez-Alt recipe which slow roasts it and finishes it at high heat to crisp it. We'll see how it goes. Serving it with hot buttered snap peas, baked corn (kind of like spoon bread), homemade rolls, and a yellow sheet cake with chocolate frosting.
