Dressing my way.
2 2lb loaves of skinny sandwich bread dried and cubed.
2 cups onions
2 cups celery
6 raw eggs and 6 boiled eggs chopped
half stick of butter melted and half cut into small pieces
about half a cup of turkey or chicken drippings (I use better than bullion to avoid the grease)
Box of Chicken stock
Salt and Pepper to taste.
Aluminum pan big enough to hold the bread. Can be mounded since it will shrink with the liquid.
In a large bowl, mix the bread and raw eggs and melted butter. Drizzle butter as it will congeal is it hits cold. Add onions and celery and mix thoroughly. Should be fairly dry at this point. Mix in the bullion and some stock. When it's almost as moist as you would like, stir in boiled eggs. Add a little more stock and salt and pepper. Spray the pan with Pam or some other spray. Pack lightly into pan and chip the remaining butter up on top. You can add more, just gonna make it good. Put in 300 degree oven. Stir about every 30 mins or so but lightly tamp back down. Should be slightly loose. Stirring allows it to brown through.
This is my basic recipe. I make giblet gravy to go with it. You can put spices in it and also oysters or clams.
