lol, my eyes were bugging out there!

Tell me about your dry rub! We once did a wet brine for the turkey, and it was awful. WAY too salty, etc. I went with 3 1/2 Tbsp Morton’s kosher salt plus herbs for the dry brine after doing a lot of reading. Nervously optimistic!

For dressing, I’m making a double batch of regular cornbread dressing and a double batch of same plus sausage and toasted pecans.
Dry rub was sage, rosemary, tiny amount of garlic, black pepper, small amount of salt (because I used lawry’s seasoning salt). I put the turkeys on a bed of onion, apple slices and celery and added stock. I’m sure I’m forgetting stuff here, but I’m pretty tired. I’ve got a great recipe for wet brine that I prefer over dry. It’s in my personal recipe book that I gave my son. If I remember, I’ll get him to send it to me. Salt was not a issue.
 
Ok, I made four skillets of cornbread in preparation for making dressing, and I did a dry brine on the turkey. Plus I made a ton of ropa vieja to keep people from starving between now and Thursday. That’s all I’ve got for now.

Ropa Vieja is good for omelets.

Yeah, living down here I have beef empanadas for breakfast fairly often. Pastries with beef for breakfast is also odd.
Oh well now, beef empanadas for breakfast, lunch, dinner, and dessert, that’s a whole ‘nother thing. Nothing weird there.

Love those things.

Just wanted to take the opportunity, while I have it, to wish all of you crazy Zoners a happy and safe Thanksgiving. Appreciate your families and extended families and never forget to tell them you love them.

I for one am very thankful and fortunate to be healthy and sane this year after everything we have gone through as Vols fans as well as all of the current turmoil and divisiveness that permeates our country and world.

I am thankful to you all in the Endzone for making this year behrable (see what I did there?) and bringing some joy and light into my life. Except @theFallGuy .
