After watching the center yet again, I must concur with the person who in another post mentioned the head swiveling. Just before snapping the ball the center's head turns then is looking forward again. This tips off the defense. A nose guard or other defender can use it time a very fast attack into the back field and disrupt a play before it has time to develop. I'd say count to ONE when the center's head comes back from it's turn and hit the line like a bat out of hell. I hope the coaches realize this before games start. Maybe the O&W game will reveal the weakness of this behavior and force a change.
