For UK it was in 1977 when they went 6-0 in SEC play and 10-1 overall. They also were .500 in 1984, 1998 and 2006.
For Vandy it was in 1982 when the were 4-2 in conference and 8-4 overall. They were 4-4 in the SEC in 2008.
Playing a WR at QB could only help them get above .500 if Dooley were allowed to float from school to school and coach all the teams UK faced in a given season. Pretty much any other coach would figure out a way to overcome that.
UK's 1977 team was on probation and ineligible for the SEC title. IDK if the 1977 team is eligible to be the answer to the OP's question.
