What you just described is a pod system

Similar but without pods. Yes TN plays those 3 teams every year but they're not grouped in a pod with them. Just the two best teams at the end of the season face up in the conference championship. No pod winner vs pod winner.

On what planet does it make sense for UT to have two good teams in its division, for Bama to have one, LSU to have zero, and Arkansas to have three?
Not a planet. Called a 4 division alignment that makes sense geographically! Nobody is going to give a $h!t who is in it.

Everyone in the east has to play UGA and UF. Every team in the west has to play Bama. It's really not that unfair. TBH Tennessee wouldn't be any better off right now if we didn't play Bama every year when we lose to the likes of UK, Candy and other crappy teams.

Considering neither Georgia nor Florida has beaten Bama since 2008 is a pretty good indication that it’s a major difference in scheduling. Add 13 losses to each team’s SEC record over the last 13 seasons and tell me their outcomes don’t look much different
