You can use the .223 bullets for deer/hogs...people do it all the time...but you do need to be aware of the bullets. There are lots of bullets for blasting and target shooting but a more limited selection that are actually intended for shooting game and at the heavier end of what your barrel will stabilize. (I'd be wanting no less than a 1-8 twist anyway) I'm partial to Barnes TSX and Sierra GameKings but there's several others.
Now having said the above a 6.8 would probably be even better as a dedicated hunting caliber.
Somebody mentioned that the 300 BO was really quiet in a suppressor. Is it quieter than a 556? Both subsonic obviously.
Yes. 556 isn't available in a subsonic that I'm aware of. This gets into the physics aspect that I'm sure GV can explain, but my understanding is that the 556 can't go subsonic and be a stable round. Essentially it would stand a very good chance of blowing up in your face. I'd highly recommend going to YouTube and searching for 300 blackout suppressed videos. They're a lot of fun.
Everything I read says that is an unstable round and you run the risk of losing body parts or your life if you use it.

Edit: I guess I should look more into that round. I guess it can fire safely, it just has very little stopping power.
Thought I would update after all the great feedback. It has been really fun researching all the different components for my first AR build. Upper assembly will be a Bravo Company Mfg. (BCM) 20" barrel with a 1/7 twist, Midwest Industries 15" G3 M-Lok free float handguard, mated to an AeroPrecision upper. Geissele G2S trigger, Magpul MOE+ grip, VLTOR EMOD stock with a Kaw Valley Precision buffer kit with a 4.3oz tungsten buffer. Found a number of these parts on really good deal, like the Geissele trigger on a 4th of July special. Can't wait to start the build!
I've been looking at a few different kits for that, definitely need the vice blocks.
Question: What do you need an AR-15 for? It looks basically like the old M-16 as far as I can tell. And the only purpose for that gun was to kill people easily. It was designed so anyone could hit a target pretty easily.
Now as far as I'm concerned anything with a long barrel isn't any good for home defense. I'm just curious WHY these things are of such interest.
Not sure if serious, but I will take a whack at it. These are just my own reasons, you could probably ask 10 people and get 10 different answers.
1. Modularity/flexibility. I can have an AR with a long barrel, or a carbine length barrel. Or I could have a pistol build. I can mix and match pretty much every aspect of the gun to fit whatever I want to use the gun for. If I don't like a configuration, I can make another.
2. Ammo. 5.56/.223 is common and relatively cheap. I can put a lot of rounds through my rifle and not break the bank. And availability of 5.56 is widespread.
3. Looks. This is purely cosmetic and personal, but I just like the design aesthetic of the rifle.
4. Overall cost. For less than a grand, I can buy a rifle that will serve for simple target practice, beginner to moderate hunting, or home defense. Literal bang for the buck overall.
Number four was more what I was wanting to understand. I can see target practice, I guess I've never seen or heard of someone using the AR-15 to hunt with. What do you hunt with it? In my mind home defense is questionable as I don't see anything longer than a pistol as being practical for home defense. It's not easy turning around in a hall way and hitting a target with a longer weapon. I may be wrong on this point.
