Friday Bishes

What is on the salmon?

The scallops look a bit too done for my taste, but I do like the sear on that one. Asparagus looks perfect. Looks good and I love that blue plate. Is that new?
after searing the scallops I took a little butter, garlic and lemon juice and let it cook up a bit. Then tossed the scallops in it. That’s what gave it the brownish color

Sockeye salmon with lemon pepper. They claim it’s wild caught salmon
It looks like there is some kind of sauce on it. Most likely wild caught. That white stuff is protein called albumin and you seem to get more from wild caught than farm raised. Not guaranteed, but it's a good sign. How much was it, if you don't mind me axing, and was it good?

Don’t quote me, but I think it was $15/lb. the scallops definitely were $15/lb and I wanted to walk away from those, but they were the best U-10s there had in awhile. Only other thing on the salmon is lemon juice

I'll be honest. I'm concerned that it's not sockey, and I'll tell you why. 2 reasons. 1. It just doesn't look like it. The color and the texture just doesn't look right. Sockeye is my favorite...which leads me to number 2. You didn't say how great it was, even after I asked.

That said, souce can tell you I don't know the difference between salmon and catfish.

It was really good. Definitely had a sockeye taste to it. It was a lot darker pink prior to cooking. After examining my own pic, I think because I rubbed in the lemon pepper a bit, the lemon seasoning has kinda gelled together and I think that's what you see as sauce. I should have taken a picture after I cut into it. The inside was a darker pink than the top shows. Still might not be sockeye, you're smarter than me on this stuff

I used to buy it fresh from Alaska, for my personal use, was too expensive to sell at the restaurant, but it was better than lobster....to me. They overnighted it and sent a harvest ticket with it. Sometimes it was caught the morning before the day I got it.
