Bob Dylan has had more #1 hits by others cover his songs than himself. I's say two of the most known are GnR performing Knocking on Heavens Door and Jimmy Hendrix's take on All Along the Watchtower.
One of my favorite covers is Whiskeytown - A Song For You (Gram Parsons)
His cover of Rusty Cage by Soundgarden is good as well. Neither of those are as good as the originals tho.

I've always liked Cyndi's version, but Celine has an amazing voice and that song is well suited to it.
gotta admit though, Celine is a woman and sounds like a woman when she sings, unlike that pansy who sings for Coheed and Cambria.
