I cook for my mom on Mother's Day. Rational people actually don't like going to a packed restaurant. Something about slower service, rushed cooking, and corner cutting drinks just doesn't sound great to me.

You had a point or two, but I do believe FoH benefits from that ****. You have two types of FoH folks...

One party likes to be in the weeds and make money with helping hands a plenty.

The other prefers consistent predictability of making a fairly set amount on a night that features mostly regulars.

I consult now but occassionally work a night or three for my accounts. Those nights are always between Sunday and Thursday.
 
FTR I build a big part of my proficiency off you (the guests) but s decade's taught me that a venue's success is determined by how savvy the staff is.

Of course, this all is ascertained by location and conceptual viability.

I'm legitimately curious what you're meaning by corner cutting drinks, as a bartender. What corner am I cutting in making drinks?

Putting less alcohol in to offset the extra alcohol they put in for themselves or friends?

I catch my tenders doing it all the time in the weeds.

Shaking/stirring for half the time. Free pouring. Dumping the tin in lieu of straining. Half assing the garnish.
 
Well, my mother doesn’t drink and she loves the Copper Cellar west buffet so this obviously doesn’t apply to me. I’ll gladly cook her a meal but she feels that takes time away from her. But like I said, enjoy the day however you feel. Why call someone irrational for taking their mother out? Why not thank them.

Went to the new Chesapake's on 9630 Parkside Dr.

Still good food & service, hard to find, but it is across the street from Volvo dealer.

We also went to Chesapeake's(Parkside) today for an early dinner. Love the ambiance of the place. The restaurant itself is large, warehouse height ceiling. We started with the crab stuffed mushrooms. Quite a bit of crab and very little bread filling sitting on top of that mushroom, very good. A couple of us got a lobster tail add-on($17 and decent sized tail), cooked perfectly. Another of us got the double lobster tail meal which only came out to like $36. Two kids under 6 each ate their own kids grilled shrimp over rice with an additional side for a grand total of $11 and change. The Haddock dish seemed to be a better cut of fish than the Halibut on this visit. Decent housemade cocktails and they've got a well balanced wine list. We enjoyed it and will be returning.

Doesn't change the fact that it's dumb.
