Made this tonight and all I can say is, "DAMN!"

This is legit. I will add one disclaimer. I couldn't find Monterrey Jack at the Walmarts I was in...and I looked for 10 minutes. So I went with 4 cups of Colby Jack and the Parm. DAMN!

Ok. Wanna know who freezes it. Moreso when the kids were younger and money was tighter, McMom and I would make a week's worth of food on Sunday. Sometimes we would freeze portions so they were at less risk of spoiling.
Sometimes mac n chz was one of those foods.

It's so simple to make. Forget making a roux and all that. Just make this.

I'm going to the store shortly and I'm going to get the supplies. I'll probably try it straight up with the Rigatoni but I bet you could swap out whatever pasta you wanted. I might see how it is and switch it up with some Cavatappi. I saw where someone added bacon which sounded pretty good.

A bump for Tin Man sharing this as my wife made this...again...last night. We've shared this recipe with several people. This stuff is the shizzz!

Most people cook them too long. If you boil them until done.. then drain immediately and run under cold water. If you don't and leave them in the hot water they continue to cook and tada!! Mush..

Its best not to rinse cooked pasta under water. If you are using it for stir fry or a cold pasta salad, use a colander and an ice water bath. Otherwise, never rinse it.

Rinsing will remove the starchy film that gives the sauce something to stick to, not to mention flavor of the pasta. I always add a little of the pasta water to my sauce, for added flavor.

Yes, indeed. Makes a big difference when you add a little of the starchy pasta water to the sauce. :good!:

On the same note, put cup of pasta water to the side. If you go back for seconds you can drizzle some pasta water on it to loosen it up and scoop it out of the colander easily.
