NFL lets in 12 teams and MLB lets in 8
that's a whole lot less than 32 and 64
Ok but its all relative. Let me break this out mathematically for you.
The NFL lets 12 teams in their playoffs, and have 32 teams in their entire league. This equates out to 37.5% of teams getting into the post season.
The MLB lets 8 teams in their playoffs, and have 30 teams in their entire league. This equates out to 26.67% of teams getting into the post season.
Based on your argument of NFL sample size, we would have a playoff with 45 teams. 45 teams equate to exactly 37.5% of the 120 FBS teams.
And based on your argument of MLB sample size, we would have a playoff with exactly 32 teams. Which is 26.67% of the 120 FBS teams.
So based on these figures I would go with 32 teams being an adequate playoff, based upon the fairness of college football's professional counterparts.
