Is there a way to add an activity later if you didn’t think to start the clock at the time? I’m almost to the point where I do remember to start it up when I go for a walk, but not for when I’m working out, gardening (“yoga”), etc

So mine allows me to pick three activities to track. I’ve selected walking, fitness, and yoga (best equivalent for working in the garden). When you’re getting ready to do one, you have to select it and hit start and then stop when you’re done. It then calculates calories etc. If you don’t do this, it will track any steps, but not that you did something involving exercise but not so much in the form of steps.I don't understand.
I understand that, but I don't understand your question. If you forget to select a sport there is no way to go back and add a sport so the watch will separate the info, if that's what you're asking.So mine allows me to pick three activities to track. I keep forgetting to hit start. I have a food tracker that allows you to enter 30 minutes of swimming, for instance, and it then calculates calories burned.
No big deal, just trying to tweak the thing.
