I have a love/hate relationship with my electric smoker. It is painfully difficult to get it to maintain temp and I am prone to going out there many times making tiny adjustments. And it drives me nuts with the cook time. So today is turkey breast test day. Trying a dry brine and just leaving it alone for the most part to see how long it takes to cook. It has been in for 2 hours and 40 minutes and the 3lb breast is now at 135 degrees. The temp has been wandering between 215 to 245 degrees.
We have 2 more 3 pounders to cook on Thursday so I want this to be right.
I am weird.
