Yeah idk about all that. Some of the very traditional winemakers are 🔥🔥
One, a lot of those still use updated science and knowledge to improve their final product. It's not exactly like how it was done back then, at least not the ones I've seen.

Two, I'm talking about thousands of years ago, not hundreds. I agree there are some phenomenal wine makers who use mostly hundreds year old methods. I absolutely wouldn't want some wine from the BC era.

Three, you know good and well I hate millennialisms like "fire."
 
I envision a much cleaner, pure taste. New soil. I would try it.
The grape itself? Absolutely. The wine? No way. I think humanity had to have improved in wine making since that time. It would be a great experiment though, if wine making methods were documented enough from that period.
 
I'm the opposite, I feel like wine back then would be awful. Millennia of science and practice have to have made it taste better.
Having made some beer you can't even make most modern adult fermented beverages with historic yeasts. There is a reason people could drink it all day and work. There is also a reason production shot through the roof when tea and coffee became popular purified alternatives to brew.
