Having made some beer you can't even make most modern adult fermented beverages with historic yeasts. There is a reason people could drink it all day and work. There is also a reason production shot through the roof when tea and coffee became popular purified alternatives to brew.I'm the opposite, I feel like wine back then would be awful.
