It is typically financial agreement papers for EEs and the Letter of Intent, because a lot of kids aren’t at school on Early Signing Day so most kids do these mock signing day ceremonies, and they just fax/email them in on NSD

So technically not official as can’t be filed til DEC but for most this is “unofficially official” but obviously there will still be some who do this but never send them in and sign with another school.
