Yeah, but i'll change it up. Grating the onions made them too small and I'll add green peppers and maybe celery next time. I didn't do their steak rub and I think I need to play around with that. I just used a briskit rub I had.

I have an old Big Joe, one with a spring hinge. I have seen the Slo-roller insert for sale just not sure if it is worth $250.

I don’t know if I’d try adding it to an old big joe. The new big joe dimensions are a little different so the slo roller fits better in it. In an older big joe it may fit a bit clunky. I love using the slo roller, but it’s not a necessity. I don’t think I’d pay the extra $250 to add it to an old big joe. I think I’d rather use that money for something like the joetisserie if you don’t already have one.

That was kinda what I was thinking. I have not pulled the trigger on a Joetisserie. Worried that I would not use enough.

Here's an offer for Wagyu burger from D'Artagnan. (20) 8oz burgers for $99. Wagyu Kobe Gourmet Hamburger Patties | Shop D'Artagnan Not bad. I just don't have the freezer space because:

Not a bad deal. Can only get 6 burgers at Five Guys for that same $100.
