I don't have ESPNU with my cable package. Is it me or has it become a yearly occurrence that 3-4 games of UT games will have portions aired on different channels due to other games running over??

The networks have a major hand in scheduling game times. Their own greed is going to kill their last reliable revenue stream from cable packages.

I'd be perfectly willing to keep paying for my cable package if I could reliably set my DVR and record a game.

I'm also perfectly capable and willing to jailbreak a firestick, set-up a VPN, and find an app or IPTV steamer that carries the channels I pay for.
