As someone who didn't grow up playing organized football, shouldn't the offense be as gassed as the defense after these long drives? Experts give me your insight

Fundamentally the defense has to expend more energy because every player runs to the ball on every play. Offense just executes their assignment

True. Our defense has not been dominated like this all season. They simply just don't seem to have it in them.
