What did you have for dinner?

Fish tacos at some place in San Diego. I'm on a mission trip working some orphanages around Tijuana and Rosarito. Take care and have a good week. I may update on food if I can.
 
Hubby's b-day is tomorrow and we're going to my dad's for fried shrimp. So tonight I fixed skillet ribeyes, creamed spinach, salad, and crusty garlic bread.

Sopes. Really good. For lunch. We had some kind of soup with hominy and a chicken leg in it. Extremely delicious. Lady told me it wasn't hot so the kids would be good. I was sweating and my nose was all cleared out. I'm gonna need pepto Bismal after this week. But so far food has been great. And the kids are awesome.
 
Pinto bean paste kind of and cheese on bread. With pico de gallo and guacamole. The pico was flipping hot. My lips were on fire. And the kids were just eating it like no tomorrow. Really good though.

Last night I made grilled chicken cordon bleu. I seasoned the chicken breast and put on the grill at 350-ish. When I turned them I topped with shaved ham & a mix of brie/Swiss.

I also cut a couple of lemons in half, dipped the cut sides in olive oil & grilled for a few minutes.

Once everything was pulled I topped the chicken with arugula and a squeeze of the grilled lemon. Easy and very good.
