A national championship does nothing for your resume in the future. He could get to the NFL through Notre Dame. if he isn't going to make it as a pro, a degree from Notre Dame looks better than a degree from Tennessee.
I have several friends with engineering degrees from UT and a few cousins with medical degrees from UT as well and they all make very good money. A degree from UT is nothing to sneeze at. I also have a cousin that has an engineering degree from the University of Memphis and she makes damn good money. It may mean something to certain companies that you went to a certain school but if I'm making a high 5 to 6 figure salary I would be happy with that but that's just me.

Actually I'm putting my money on the person with better credentials, harder workings, better knowledge of the field they're going into. I guarantee the degree doesn't make that much of a difference where its from. Most of the time a person goes to X school for financial reasons, not for which is the better school academically.
How are you going to know this about the person right out of college? They may have worked in that field in some way but they haven't held the job they are applying for. They needed their degree for that. Other than an interview.... you don't know if they are a hard worker. If we are basing it off the schools, Notre Dame is harder than Tennessee. If we're basing it off of credentials, Notre Dame is a better credential than Tennessee. I think you're underestimating the difference between certain schools. That's like saying it doesn't matter if your degree is from Harvard or if it's from Tennessee. It really does. In fact, some jobs will pay you more based off where you want to school. Someone from Tennessee could end up knowing more about the job than someone from Notre Dame but Notre Dame definitely looks better on your resume.
