The chormosomes that determine your sex cells also determine your gender. I mean, unless we have the ability to change our chromosomes, Gender stays the same regardless of getting boobs or not.

While biological sex can be used as a defining characteristic of one's gender, it is not limited to or entirely defined by that.

What you are describing is changing one's actual biological sex, not gender
