Beer (and beer pics!)

I stopped in Wish you were Beer on my way down to Destin a few weeks ago. Cool little spot.

I saw a few bottles of Embrace the Funk at Mt. Juliet Beer Store on Monday for anyone that is interested. I wanted to grab one but I would have drank it and I started a new job the next day.

I love Destin so much. I wish it weren't so hard to get to.
 
Have been thinking about putting one in my basement, but it has been at the bottom of my "things I gotta get done" list. Maybe soon

My set up isn't exactly ideal. Its a cabinet in the corner of my man room but it stays about 68 degrees. I've got mostly high grav stouts in it with some barley wines and a few sours.
 
Anyone else cellar or age beer? I started a cellar about six months ago and just past the 100 bottle mark.


I've got a few I'm trying to age. But I don't have a real good spot. Just put them in my laundry room! Plus I don't know how long I'll keep them there. I don't have the patience to let them sit around!
 
I age beers. Have 2 full size fridges plus some in the house. Let's say some are aged on purpose while others by accident. Not alot of organization...
 
Why do you age beer? I was under the impression fresher is better?

For the most part that's true but some high gravity beers like imperial stouts or sours can improve with age. I'm doing it as an experiment. I want to do some vertical tastings where we'll have 3 or 4 or more vintages of the same beer back to back to see how it changed over the years.

Not always improve, but evolve. Some beers that are "hot" will have that alcohol burn fade out over time, while some sours change in tartness for better or worse. If you like Barleywines, let that Double IPA hops fade, lol.

Yeah, that’s why I said can and not will, I was just trying to keep my answer short. They will change and not always for the better, lol. To your point though, that’s exactly why I’m looking at this as an experiment. I like that “hot” alcohol burn from barrel aged stouts and other intense flavors that I read will fade so I may give up on aging after a couple years. If that’s the case I’ll still use my cellar as kind of a holding area but I won’t intentionally let bottles age. I brewed a winter warmer type beer two years ago and it was pretty good then but it is fantastic now, that’s really the reason I want to try aging some commercial beers.

Check out CraftShack. A friend of mine has ordered Ballast Point Victory at Sea before..........actually the first time I had Ballast Point was from him. They actually sell it locally though now :)
