Guys from Louisiana that park next to us in the infield at Talladega cook gator every year.

They season the hell out of it and inject it with Cajun spices, wrap it up in foil and cook it over a grill for about 6 hours.

Ain't nobody cook better in the south than the Cajuns. Those people can cook!

Anyone had success grilling gator tail? I tried years ago, but it was so tough. I'm convinced that serving gator as an appetizer tomorrow night is crucial to us winning the game, and I'd prefer not to have to deep fry.

Gator is naturally tough. I've personally never cooked gator but I'm a 6th generation Floridian that grew up on gator tail and have never had it not tough. You'll never get a chicken nugget "feel" to it, it's too powerful of a muscle. But when done right, I'll take gator nuggets over chicken nuggets any day.

FYI, fried is the only way to go. You won't find it any other way in FL.

People are making it way more difficult than what it is.

No kidding. I've cooked gator every year for this game since 91. It's easy.

First couple of years it wasn't very good, but I learned a few tips from a buddy in Lonsdale who cooks pig ears.

Granny Clampett makes the best pig ears imo.
