Just a personal thing.

Short answer would be similar to why I wouldn't use filet, Strip sirloin, ribeye and t-bone all together in a stew. Why wouldn't you eat them by themselves separately? Unless they were old and you needed to cook the crap out of them to make sure you killed any bacteria.

But have at it. Some better cooks than me don't feel the same. But some better ones do. I don't really care either way.

Sure, but fish and other seafood are so delicate and therefore harder to keep fresh. You don't normally see fish tacos and seafood stew on regular menus at nice places.

Most places go through so much chicken that you don't really need to be concerned with it.

Grocery stores do -- that meat and chicken covered with so called seasoning is old & the delis cook old chicken and pass it off as fresh

It may be but I've seen some stuff as bad and worse. I've seen some places on Ft. Myers beach that might scare some of you so bad you'd never go back in a restaurant ever again. And they were thriving businesses.
