I just pulled a 4.54 lb. prime rib out the oven. I need to calibrate my oven cause it overcooked and shouldn't have. It's nice and tender and has great flavor though.

Haha, he rassles over-sized cast iron skillets the same way I do!I like him, no doubt his cooking is full of the main ingredient. And I agree with him, screw reverse sear!! That's a foodie thang.
