Yeah I am jonesing for some fish. In general I don't fry much, it's mostly grill, and cast iron pan fried in butter, tallow, or avacado oil. Try and keep it basic.......but I do fing miss delicous catfish fingerling poison dusted in cornmeal.......me calling it poison should not be construed that I do not absolutely love that sh*t. River Inn was one of my favorite haunts in Chattanooga area.... Catfish Fingerling heaven. But my extreme southern diets back in the day of fried everything is why I am doing what I am doing now to heal the liver etc. I think I absolutely will do some fish this week though. Finding healthy catfish aint easy, and I don't trust anything out of the TN river now. Would love to find a healthy source. There's a guy up in the Squatch Val that does fantastic Mtn Trout in fresh clean water from a cave on his property though....ever once in awhile I go with a cooler and stock up. You can choose to fish for them yourself or just tell him how many pounds you want, either way he cleans up and packs them, in between jam sessions and his best Ted Nugent impersonations on his guitar.Dust catfish filets with creole seasoning, sear them in a pan using monosaturated oil, and they might fit into your diet.
