Turned out to be Chipotle Chicken stir fry served on black beans and rice, smothered with green onion, tomatoes, lettuce, fresh guacamole, sour cream, and shredded cheese.
Simple recipe
Season fresh peeled medium shrimp with creole seasoning. Set aside.
Make grits in accordance with instructions, go a little easy on the salt. Cook grits to slightly thick consistency. Stir in ~1 teaspoon of cream per cup (you want them creamy, not soupy). Stir in shredded medium white cheddar cheese to taste until thoroughly blended. Keep at serving temp, stirring occasionally while cooking shrimp. Preheat sauté pan, add a little oil, add shrimp and sear (do not over cook). Spoon grits into bowl(s), place cooked shrimp atop grits, optional garnish with chopped fresh scallions, serve immediately.
