So you're saying you hate tacos? What are you basing this opinion that they don't assimilate on? I think some older people don't assimilate, but second generation almost always does. I mean, it's been 15 years since I was a missionary, so maybe the younger crop is different (unlikely), but I met thousands and thousands of immigrants on my mission and I can't think of a single kid that resisted becoming American or speaking English. Are we really worried about whether or not that kid's 65 year old grandma ever goes to the movies and eats hamburgers?
The parents lamented kids that didn't speak Spanish well. They were choosing English first, which was common, even in the home. The melting pot doesn't care how much you want to keep your culture. You're going to change us a tiny bit* and we're going to change you a lot. That's how America became great.
*typically incorporating your best ideas/contributions, like tacos, tres leches, artists, comedians, etc.
