Personally, I choose to believe that there's an invisible man in the sky who watches everything we do versus hard evidence such as science and bologna like that.
The problem with this statement is that much of science does not deal with hard evidence, much of it is hypothesis and observations which require at least some degree of interpretation.

In the theoretical arena I agree, but much of the theory is based no hard evidence.
I've always said this. Scientific theories exist on a continuum ranging from "We really don't know" to "Almost fact". The Big Bang is more close to "We don't know" and something like Evolution is "Almost fact".
Before anyone jumps on that, by Evolution, I mean the overarching theory. The specifics of the process involved are more close to "We don't know". However, there is very little debate in the scientific community about Evolution happening in some form.
It has everything to do with evolution and believing the Bible.
The first 2 chapters of Gensis says that God created every living thing.
Genesis Chapter 2 verse 7:
And the Lord God formed man of the dust of the ground, and breathed into his nostrils the breath of life; and man became a liviving soul.
If one believes the Bible, one has to believe that God created man and every other living creature on earth. That rules out evolution.
I guess we should also assume every animal on earth lived within walking distance to the ark as well.
