Thanks everyone for the advice on the prime rib. It turned out fantastic! Total cook time was 4 hours but honestly I think I could have taken it out a little sooner. I'll try to attach pics later since I'm on mobile.

I get them at Barbeques Galore in the DFW area. They have a map on the website too of retail locations. A few in West TN and Chattanooga.

LOL, their map shows they carry them at my neighborhood Ace Hardware. I guess I've just overlooked them...though not usually shopping for rubs in Ace. I'll check them out.

My wife got a pack of individual boneless beef short ribs at the store. She usually braises them in a crock pot or Dutch oven. Anyone ever had success grilling these little guys?

Indirect around 250'ish. Put your favorite beef rub on them. Spritz/baste as needed. Should hit the tender mark around 175-185. Depending on the size, 2-4 hours.
 
Never cooked on one but people that have them love them. I think you'll be happy. Show it off for us when you get it set up. :good!:

Will do. I have a friend who works at Cabelas and he got it on a scratch and dent sale. The grate has a very insignificant bend on one end that I can straighten out in 30 seconds. It retails for $799 but I got it for $200.

I butchered some pigs before Christmas so I have a huge slab of ribs with the bacon still attached that I'm gonna smoke. I'll let you guys know how they turn out.

Pigs are super easy. I have 72 acres and they only used a 16x16 space for three of them. They ate about $200 worth of feed a piece and yield about 80% useful meat. A 400 lb pig will get you 320lbs of freezer meat.

there is nothing as good as a home grown hog

andf it don't matter as much to breed either

but I do like the ones with black spots

I've got a Traeger pro 22 on order. Does anyone have any experience with a traeger? Tips?

LOVE my Traeger!

Rule #1 with Traegers is you cannot tell your wife how easy/foolproof they are. If she wants you to run to the antique mall with her on a gameday Saturday, tell her you can't...gotta tend to the smoker. Once you get the hang of using it, it's like Ron Popeil says..."set it and forget it!" But if you go to the antique mall, those cold beers won't drink themselves.

Other than that, enjoy it and be creative. Costco deli doesn't make anything I haven't tried on my Traeger - put their stuffed peppers in a foil pan with beef stock and a little cabernet...throw a bacon weave on their mac and cheese. Even simple things can be amazing. I love root veggies with EVOO, salt and pepper...my favorite is smoked tomatoes - again EVOO, salt and pepper. I even tried watermelon - not great. My daughter says I'd put her on the Traeger if she had any fat on her.
