What's Thermapen?

Highly recommend the Thermapen. Hardly a week goes by I don't use mine. When I'm brewing beer it lets me get an exact mash temp in seconds. Gives you the internal temp of meat in seconds. Helped me develop my technique for cooking steaks. I know exactly how long to leave one on to achieve 130 degrees of juicy bloody goodness. :)

Ha true. When you use the chimney just toss a bit of cooking oil on the paper you put underneath before you light it. That will keep the paper burning a little bit longer and allow the coals to light. You can use a spray bottle but I usually just drizzle a cap full on the balled up paper. Make sure you let the coals get nice and gray before you dump them
 
when I have used cooking oil to help get the chimney going faster,it would lite faster than what I was used to and I would burn up my charcoal :)

a few drops will go a long way
 
Ham on the the Smoker.
Made up a Bourbon, Pineapple, Cinnamon and Brown Sugar glaze to go on it

I bought my bigger smoker in Memphis. We go up there a lot. Try out the Memphis BBQ supply store,all kind of goodies in there
 
That's where I bought my Primo. My buddy's sauce is for sell in there. It's very good. Victory Lane BBQ sauce.

I've seen the sauce in there just never pulled the trigger on buying it. We should be heading down before too long and I'll pick up a bottle

I miss the pier in St Pete. They used to have an awesome store with all kinds of hot sauces, BBQ sauces, and rubs.
Loved that and the hat store right by it. FYI, a committee just approved the new design of the pier and it next goes to the full council for vote. If you go to the farmer's maret on the weekend (down by where the pier is) you can find some good foods and sauces!!! Worth the visit plus it's free besides what you purchase from the vendors.

That's good to hear. We don't live there anymore but come down for vacation sometimes. We never knew why they closed the pier.
