OK all you VOL grillers and bbqrs, I need some help. I'm not sure if you saw my post a few weeks ago but my step-daughter and I submitted a video for an amateur cook-off at a bacon festival in Nor-Cal. Well, damn if we didn't get selected to compete. It's eight teams in three rounds of chopped style "mystery box" competition.

Anyway, I could use some help with some easy 15-20 minute deserts and sides (that I could just throw bacon or mystery ingredient in?) that have a short list of common ingredients. As well as any simple ingredient rubs or sauces. I'm open to most anything...so fire away.

I've become a big fan of corn salad. Perhaps a bacon infused one with candied bacon sliced on a bias. If she needs to save time, she can sautee the corn in bacon grease and butter. Getting it off the cob is easy. Shuck it, put the pointy end in the little hole of a bundt cake pan. Slice the kernels off and let the corn fall in there and proceed to cook. Raw, diced snow peas, red, yellow and green peppers and maybe even a little diced onion would mix well.

Bacon fajitas, battered and fried bacon on a stick, bacon dogs, bacon and cheese roll-ups, cut up chicken breast wrapped with bacon and broiled or grilled, and mince bacon and add it to homemade vanilla ice cream.

You (being the Peyton Manning of this thread) probably already know all these, but here's my bacon twists...look forward to hearing any tweaks you may have.

Desserts:
I love the combo of bacon and peanut butter. I've made peanut butter and bacon pancakes and waffles - pretty good. What about some sort of bacon/Reese's PB Cup? "Par" microwave bacon and put a couple of strips in muffin tin (like a weave), put PB and choc inside?

How about bacon and cinnamon red hot candy? Add bacon to this? http://grandmascinnamon.tripod.com

I ripped off a TV recipe for bacon and egg grilled cheese sandwiches that has made me start adding bacon grease a lot more. The sandwich was pan fried bacon, save the grease, buttered bread "grilled" in the bacon grease, favorite cheese(s) on either side, add bacon and fried egg. Put on loose sweatpants before you eat it. SINFULLY good but almost disgusting after the fact...so bacon fat fried apple pies/turnovers?

Sides:
Bacon and horseradish in deviled eggs is an easy one.
Bacon and brussel sprouts are a great pair.

Are you going to have to cook with a time limit or can you make the stuff at home and bring to the competition?

Are you going to have to cook with a time limit or can you make the stuff at home and bring to the competition?

We'll be cooking on stage, so there's time limit. They've not sent the instructions yet so I'm not sure exactly how it will work. Just that there's mystery ingredients and of course bacon.

I have a good bacon and onion jam that's great on hambugers. A great caramel bacon buns dessert that is simple and uses biscuits. But, your going to have to use the mystery ingredients with bacon to make a dish and/or dessert. We could give you a hundred recipes and you not be able to use them depending on what mystery ingredients they pick.
 
Cali the bacon and onion jam takes hours. Basically a jelly and has to set up so it wouldn't work but if anyone wants it I'll be glad to post it. The caramel bacon buns I found a few years back and are delicious, easy, and fast. They use caramel ice cream topping, bacon, and biscuits. No more than is in it you just might have caramel and biscuits as some mystery ingredients.

Without knowing all of the details and rules, it's hard for me to gather any real thoughts on possibilities.

I can offer you a suggestion that might help get your creativity sparked a bit.

I would guess they will judge you on creativity, presentation and taste.

I like to call this constructive pairing. You already know you have to use bacon. Make a list of things that pair well with bacon, like cinnamon, pepper, apples, fennel, Rosemary etc. Then under each one of those items, list what pairs well with them. Then see what you have and think of "exotic" alternatives. Like instead of black pepper, use pink peppercorn.

Off the top of my head example. Pecans pair well with apples. Chopped pecans pressed in a raw pie shell, toast it in the oven for a few minutes. Cook a can of Apple pie filling until it's reduced down to its Caramelized. Spread some cream cheese or smoked cheddar cheese slices on the bottom. Pour the apples in the pie shell (Caramelized Apple in toasted pecan pastry = good). Top it with whipped cream (if you can bring ingredients, make some creme fraiche), then sprinkle bacon bits, fresh rosemary and pink peppercorns. (Pinks are a secret ingredient). Serve it with cinnamon sticks with the end carved out like a little spoon.

Don't know if you will be able to bring any ingredients with you or just use whatever they make available. Being able to bring items opens the door for many cool ideas but, if you are allowed to only use what they offer, this exercise can help with planting ideas with things you might use that they have that no one else thought of. Make sense?

Like I said the last time I responded to you with this type of comment. This pie was not a suggestion, I just hope this helps you think out of the box and gives you some good ideas you might not have had.
