Put it in a glass of ice water. First make a glass of ice water and let it set for about 5 minutes, place the thermometer in it without touching the glass, it should read right at 32.

I always suspend them in boiling water and calibrate to 212.

When I was working in the restaurant business we used the ice water calibration, I guess because it's a little quicker.

Thank you, sir. Love it, so far. Wish it had a front shelf option. Also wish you could slide the lower rack in and out easily. However, I really love the build quality and the customer service. I emailed a question, and the response I got was from their Director of Engineering.

Glad to hear. I've been eyeballing ALL of them for a while. That's impressive their Director of Engineering got back to you. Something tells me it will be an option on future models. Hope they send you one gratis.

I take it you got them at Costco today? I haven't seen them in prime when I've looked. My Dad's cooked them a couple of times and says they're better than prime filets. I may run by there in the morning and see if they have any more.

Yes, we've gotten Prime Caps there before too. I haven't seen them rolled up like that... Really nice!

I picked up a 12 lb prime strip loin. Gonna reverse sear it on the Silverbac and see what happens.

They only put 1 or 2 packs of them out a day. You basically have to be standing there as they put them out because they get snatched up as soon as they get put out. I am getting them as a gift and haven't actually picked them up yet. The fine gentleman who cut them will be delivering them to me later today.

Brisket went on at 1030 last night. Fixing to pull it off in the next hour. Never done one before so excited to see how it comes out.

Yeah the wrap and cooler gave it an awesome bark. It was awesome will be doing it again. Used a local rub by a company called Four 41 south. Love their rubs.
