The Grill and BBQ thread

Hey GM just use accent it's salt free but will do the same as adding salt. I'll be doing my first turkey this weekend for a trial run for thanksgiving. Got roped in to doing one myself :)

how long do let it soak ? overnight or for 24 hours ?

and I assume you add more seasoning to it before you smoke it and if so,do you take the bird out of the brine the night before and then apply more seasoning?to let it soak in ?

and how much Accent do you use ? the same as the amount of salt ?

I can use the pan out of the broaster to soak it in the fridge
 
Has anyone here ever tried Dirty Harry Sauce? I've made an effort to locate it but have had no luck

looks good,I assume you brine it first? then applied some seasoning ?

and did you check to see if salt has been used on the bird when you bought it ?

Yeah I washed it good before I brined it. I injected it with Tony Chachere's mixed with my injection. Made a compound butter and rubbed it under the skin,then rubbed with mustard and a rub

I will apply some mustard too,hmmm makes me wonder if the family will like it,I know not to apply any heat at all to it and there a pretty bland bunch when it comes to seasoning

i made some dressing one year and I was told my husband doesn't like celery and before I thought,i said well pick it out damn it,that went over like a lead balloon :)

so I haven't made anymore and it was pretty bland to begin with

The TC should have came with an injector. The compound butter is just softened butter mixed with your favorite herbs and rolled in wax paper or plastic wrap and put back in fridge.
 
on the TC's all i bought was the shaker can,my friend uses a linoleum glue injector on his hams lol I will try and make some butter like that

on a Turkey Vol72,do you look for salt free ones or adjust the brine if it has salt added ? I think I read some where,that some were all ready brined ? I could be wrong on that though

but it looks like a hell of a machine,can you get a half of a pig or hog in it ?

that comment got me to reading this about hogs and thought I would post it so vols72 would know what type of hog to look for :)

just kidding but I recognized some breeds of hogs from a hog farm i worked for a year or two

I was given a black and white Poland China (crossbread) and that was some of the finest hog I ever ate,of course I have never really had any bad hog meat

Oops, sorry its fixed now lol

Not sure how much I can fit in it, but I am going to put it to the test this weekend lol
