oh the Uncle Henry's Apple Chipotle rub is excellent,with the Tony Chachere's Creole Seasoning rub,i am getting better with my smoker,finally lol I did use foil to choke down the intake door,where the charcoal is setting in the fire box and it was a bit to much for a cold and rainy day,since the adjustment has rusted shut lol
i'm still wanting to see who try's the Swine apple recipe first,I was thinking of using a big pork tenderloin,with it sliced into thin strips instead of using bacon for the outside of the pineapple so it doesn't get burnt
and maybe cooking the loin a little before it is inserted into the pine apple ? and using the loin instead of the boneless ribs ? maybe slice it up so it fit's inside the pine apple too,to cut down on cooking time ?
I'm going to have to stay away from ribs because of the fat content,my heart doctor probably wouldn't go for me eating ribs lol
