oh the Uncle Henry's Apple Chipotle rub is excellent,with the Tony Chachere's Creole Seasoning rub,i am getting better with my smoker,finally lol I did use foil to choke down the intake door,where the charcoal is setting in the fire box and it was a bit to much for a cold and rainy day,since the adjustment has rusted shut lol


i'm still wanting to see who try's the Swine apple recipe first,I was thinking of using a big pork tenderloin,with it sliced into thin strips instead of using bacon for the outside of the pineapple so it doesn't get burnt

and maybe cooking the loin a little before it is inserted into the pine apple ? and using the loin instead of the boneless ribs ? maybe slice it up so it fit's inside the pine apple too,to cut down on cooking time ?

I'm going to have to stay away from ribs because of the fat content,my heart doctor probably wouldn't go for me eating ribs lol
 
i know what you mean,but you lying to me :) I've gotten to be better at smoking thru you,Bocca and others on here,a football forum shouldn't be such a surprise at finding a way to do some good smoked meat,but it has been

still a turkey is going to have to be done next month,so if it doesn't come out good,i'm going to blame all of you by name,in front of my family and I'm serious about that lol and I'm not going to take the blame :)

but I do think it will be all right,for Christmas I will do a ham,which I know I can nail,unless it is extremely cold and I will have to fight with the smoker,I will take the blame for that one :) if needed
 
GM make sure u brine that turkey. Here's a pic of the one I did a few months back. The pan was a little small :)

I haven't been using any pans under what I have been smoking,I assume it is just a clean up thing ?

and I'm going to use one of the bottom crisper drawers in the bottom of my fridge to do a brine,according to if i can get one to fit :)

i will let it thaw first :hi:

A few nights ago my dad and I decided to cook a couple of NY Strips on oak logs. This was pretty tasty!
