I'm in East Tennessee and Dad wants to smoke bologna. any idea where I can get one? Are they called chubbs?
 
Yeah that's what they're called Boca..

You should be able to pick one up at any grocery store

Found a small (3lb) chubb of Boar's Head at the new Ingles in Lenoir City. Slathered in yellow mustard and John Henry's Pecan Rub. Used apple chips for smoke.

I assume the yellow mustard taste doesn't linger when the bologna is done?

I used this technique on a butt and it had no mustard taste.

I don't like mustard is what I'm saying.

No. It doesn't have any mustard taste. I just pulled it off and gave it a taste. I'm hooked!!!!!!! :rock:

Done my first one a couple of months ago and all I've heard from my wife is when are you gonna do another. Also the longer u let it cook the better it gets.
 
I had it around 300-325 for a 2 hours or so. As 72 said, you can go longer. It was start to really get a nice crust. The natives were restless so I pulled it.


Thanks for the information. Picked up a chub of lays today, will give it a try tomorrow.
 
Finally getting my grill tonight. Lowes screwed up and didn't place the order in time to get it to me on my delivery date last Tuesday. Can't wait to fire it up tonight.
 
Ok guys, I have an electric smoker and a couple pounds of salmon filets. I'm looking for a couple marinade recipes to try simultaneously in the smoker. Any advice?
 
Baby backs on the kettle. Never cooked them on it. Always used the Old Country. Out of logs and didn't want to go to Academy. Had some apple chips and charcoal.

Wife working tonight. 2 year old at granny's. Ribs and beers dinner for me.
