The Grill and BBQ thread

Butt question - I'm going to do a small Boston Butt (5lb) this weekend. Kinda have a hankering for both pulled and sliced.

Anyone do both with the same butt? Is it feasible to cut it in 1/2 at about 185 so I can slice one half and put the other back in to 200 or so?
Shouldn't be a problem but I would pull at 180 so it doesn't go over while u let it rest before slicing
 
What smoker is that?

Kiddiedoc mentioned he bought a Coleman Rroadtip Grill. This is mine...set up as a portable smoker. I'll crank out some salmon or pork tenderloin etc.for the adults when we go to the beach. Then put the grate back for burgers and dogs for the kids. Works great!

Have a small butt on the smoker. Using the AMNPS for the first time and using some maple chips as well. The rubs I had were both salty and very low on sugar so mixed them both together and cut in about an equal amount of brown sugar.

I'll keep you posted
 
about 4 hours in - just put the probe in - roughly 135. You can see the AMNPS has burned through one of 2 rows. Little thing works like a champ.

Love the AMNPS. Beats the hell out of changing the wood chips every half hour on an electric smoker. I use mine every time I use the smoker.

Doesn't get much easier than setting up that bad boy in an electric smoker and opening the smoker maybe twice the entire time you smoke a butt.

I recommend you buying a small propane torch to get the pellets going. It is a bit of a pain to keep the smoke going if you don't get the embers good and hot before closing the smoker. A grill lighter wouldn't cut it

I got a little butane torch - got it going but barely. After about an hour I hit the pellets again with the torch and that did the trick. Been cranking ever since

That's the hardest part, keeping them going. I usually keep the torch on the pellets for a good 5 min. Let them burn. Once I get it going nice and hot, I'll put my meat in. First time I used them, I made the mistake of not putting something above the AMNPS. It kept going out and I couldn't figure out why, until I realized duh the meat drippings were putting it out.
 
Worst stall ever. Stuck at 152 for hours; finally foiled and put in the oven at 163 - that was 5 hours later. It's only a 5lb butt. I know these things have a mind of their own but this is ridiculous. I have to go to bed some time!

If I know I'm going to be up against the clock I just do the butts turbo style. I cook it at 325-350 and it blows right through the stall. Believe it or not, there is little loss in taste/moisture.

This one was a stubborn little booger. I thought by going small (5 lb) I'd not have this problem.

Even after I foiled and put in the oven at 290 it still took another 3.5 hours to get to 198. Couldn't wait any more so I took it out of the oven and put in to rest in the cooler for an hour.

Came out fine but almost 15 hours for a 5lb butt was more than I expected. Won't mess with the small ones going forward.

I like big butts and I can not lie.

That's a rough stall. At least it turned out well!

Holy crap! For a 5lb. butt that's crazy. :loco:
