Staubach (Navy), Dorsett and Marino (Pitt) played in Knoxville?
They were certainly before my time in UT. In fact they were kind of my heroes as a kid. I never knew their teams ever played the Vols in K-town though.
As for Vols, I saw Reggie White during his extraordinary senior season (1983). Since you eliminated Peyton, I will also go with Heath Shuler during his junior season, when he finished 2nd in Heisman balloting.
NonVols, Herschel Walker and Marcus Allen, 1980. Unfortunately, I saw the infamous Herschel-runs-over-Bill-Bates play in Walker's collegiate debut. Statstically, they had two of the top seasons of any Vol opponents. Walker had 1,616 yds. rushing (5.9 ypc) and 16 total tds, while Allen had 1563 yds. rushing (4.4 ypc) and 14 tds.

That 1980 team (5-6) wasn't particularly good, but what a home schedule: eventual national champion Georgia (12-0), USC (8-2-1; we, unfortunately, saw the game-winning FG sail through the uprights at our end of the field), Alabama (10-2) and Pitt (11-1).
Whoever referenced Staubach and Dorsett must have seen them in an NFL exhibition game; we never played Navy during Staubach's career at the Academy (1962-64) or Pitt while Dorsett was there (1973-1976).
It was an exhibition game. I think maybe late 70's. but that's just a guess. It was the most bored I've ever been at a game in Knoxville.
