Grab whatever andouille is available at Safeway

Sometimes it is Johnsonville. Today it was Safeway store brand

I really do not worry as much about the andouille as long as I have the good beans and the rice is on point

I throw in a couple smoked ham hocks, enough cayenne to get the wife's attention, and chicken stock instead of water. Crystal Louisiana hot sauce of course

I have not seen okra in a grocery store here in Colorado in years. Not even frozen

I know this will sound like bragging but I make a pretty mean roux

First You Make a Roux. Name of his cookbook. Justin Wilson. I loved him

Find the cookbook to crush cajun cooking. Or 'Pirate's Pantry' if you can find a copy online. Probably out of print
