What did you have for dinner II?

In Las Cruces, NM, 1980, local restaurants served “enchiladas” - a stack of fresh hot corn tortillas served flat with layers of red chili sauce in between and on top. Meat and/or cheese was extra. Many folks ordered them without these. Straight up. Like a stack of pancakes with red enchilada sauce. I tried them this way. They were good, but I preferred them “stuffed” with pork.

The mess I cooked today was the result of being stuck with the ingredients for veggie enchiladas when Certain Persons had eaten the corn tortillas I had set aside. 😡 So once we got back home, I bought more tortillas and a pound of ground pork and went to work. A profoundly unhealthy but tasty meal!
