I've got some pork chops I may do Wednesday with soup beans. I've been craving both.

I kid you not, I have the ham bone in the freezer from our easter dinner that I've been saving. Looks like it'll be Thursday now though.

What kind of beans define soup beans? I grew up on pintos only as "soup beans". Cornbread and either slaw or chow chow were necessary. Onions and hot peppers optional.

What kind do you all choose? Soak or parboil? Salt at start or end?

And of course that is what the Easter ham bone🍖 is for!

My family have always as far as I can remember used pintos and some kind of salty meat. Ham fatback or even a little bacon grease.
