Trout is best fixed on a grill wrapped in foil with butter and lemon slices or lemon pepper, IMO.

Whoa. Whoa. Whoa.
Heat a skillet on medium heat, melt a small sliver of butter, add 2 Tbsp olive oil.
While the oil is heating, take your filets, add cornmeal and lemon/herb seasoning to the flesh side and lightly pat down.
Place the fish in the pan flesh side down and saute for about 5.5 minutes a side. (I always dress with lemon on each side too, just take a quarter slice and add the juice).
Remove, garnish with parsley and a few crushed pecans, if you like pecans, and serve with a quartered lemon.

I was told the one here in middle Tennessee was the last.
I think the last to close was in San Antonio, but I could be wrong. SA had two or three for a while, then only two and now none.
San Antonio is... has good food. Its people, however, are likely to wear black leather jackets with the state flag sown on the shoulder.
