The best version was FS X, in 2012 or so MS released MS flight - but it was like an arcade game - they quickly abandoned it. X-Plane is also a good one.

The amount of detail in flight dynamics, control of flight surfaces, scenery, weather, ATC is unbelievable. There are entire community's dedicated to flight sims and third party content. Here's a video that demonstrates the level of detail in preparing a 737 for taxi.
