I think they should not allow religious symbols because of the separation of church and state, not due to offending people although I could see how someone would be offended seeing as how ridiculous people take religion.
The US Constitution specifically says, "Congress shall make no law respecting an establishment of religion, or prohibiting the free exercise thereof ;" It does not say anything about state or local governments doing anything regarding religion. I am not advocating that states start do that, but as long as it isn't the Congress of the United States passing a law establishing a religion or prohibiting the free exercise of religion then there is not such thing as the "separation of church and state".
