Have you tried a mixture of pimentos, roasted red peppers and a small amount of chopped hot peppers (scotch bonnets for me)?
No. Sometimes I'll put Jalapeno's, olive, cheese, crushed red pepper etc. on the sammich, cracker, chip next time cucumber slice, whatever I'm using as a vehicle. But normally I just like it plain. Pimento cheese on pumpernickel grilled with a slice of tomato.
