You probably already got one, but you could try some different things. Not all in the same lasagna, but here are some ideas I use.

Use ground Italian sausage instead of ground beef.

Roast some zucchini with olive oil to use in it.

Use some spinach.

No boil noodles.

I always use fresh mozzarella, it will change your lasagna by itself. Never use packaged shredded.

Use some cream cheese.

Sprinkle some feta crumbles on top as it comes out of the oven.

Secret ingredient. Cinnamon. About 1/2 teaspoon to a pound of meat. And use some heavy cream in the sauce.

I love to make a Pierogi lasagna for something different.
